lemon Rice

                                          "lemon Rice"


Ingredients:


Uncooked Rice- 1/2 cup
Water-1 cup
Oil-2 tbsp
Urad daal-1 tsp
Mustard seeds-1/2 tsp
cumin seeds- 1/2 tsp
Peanuts-10-12 crushed
Cashews-7-8
Onion- chopped medium size.
Curry leaves-5-6
Green Chili-2chopped
Turmeric Powder-1/4 tsp
Salt as per taste
Lemon Juice as needed
Coriander leaves chopped for garnishing


Method:

*In a cooker add 1/2 cup rice and 1 cup of water and cook till 2 whistle come,keep them aside.
*In A pan heat oil on medium flame..when it turns hot add peanuts and cashews when they are half roasted add urad daal,when daal turns golden add mustard and cumin seeds. allow them to crackle.
*Add Onion,green chili,curry leaves,saute them nicely until onion become translucent.
*Add turmeric powder,salt and rice mix well,add lemon juice.
*Mix them nicely and allow them to cook for 2-3 mins.

*Garnish with chopped coriander leaves.

Gulab jamun Ki Sabji(no onion no garlic)

"Gulab Jamun Ki Sabji"


Ingredients:

Gulab jamun mix-1 packet
Milk for kneading dough
Oil for deep frying

Oil-2tbsp
Tomato- 4
Green Chili- one
Turmeric Powder-1/2 tsp
Coriander powder-1 tsp
Cumin powder-1 tsp
Red chili powder-3/4 tsp
Salt as per taste
Clove -2
Cardamom-2
Cinnamon-1 small piece
Bay leaf-1
Cumin seeds-1/4 tsp
Cashew -10-12 soaked and ground to paste
Milk-1/2 cup


Method:

*Make gulab jamun ball using ready mix,Deep fry on low to medium heat until golden brown in color,keep them aside.



*Blend soaked cashew into paste with milk,keep aside.
*Blend tomato and green chili into paste,keep aside.
*In A pan heat oil,add cardamom,clove ,bay leaf,cinnamon stick,roast them for few seconds ,add cumin seeds.
* Add tomato puree,let it cook for few mins,add all dry spices and cook till oil separates.
*Add cashew paste,mix well,add water to make flowing gravy.
*let gravy cook on medium flame for 5-6 mins.
* Add gulab jamun,cover the pan and cook on low to medium heat for 8-10 mins.
*Gulab jamun curry is ready.

Meethe Chawal

"Meethe Chawal"



Ingredients:

Basmati Rice-1/2 cup uncooked
Water-1 cup
Ghee-2 tbsp
Cinnamon stick-small piece
Cloves-3-4
Cardamom-2
Sugar -1/2 cup
water-1/4 cup
Saffron Strands -8-10 dissolved in milk
Almonds-5-6 chopped
Cashew-5-6 chopped
Raisins-10-12


Method:

*In a cooker add 1/2 cup rice and 1 cup of water and cook till 2 whistle come.keep them aside.
*In a pan put ghee and heat it on medium flame,now add clove,cardamom,cinnamon and saute for 30 secs.
*Add water and sugar,stir it,put saffron mix,,cook until sugar dissolve.
*Once sugar dissolve let that mix boil,now add rice.
*Mix gently until all rice coated with saffron color.
*Put the flame on low and let it cook until all moisture is evaporate.
*Add all chopped nuts,mix well and transfer it to serving bowl.

Besan Wali Shimla Mirch

"Besan Wali Shimla Mirch(Capsicum with gram flour)"


Ingredients:

Capsicum-1 big size cut in small cubes
Gram Flour-3-4 tsp
Mustard seeds-1/2 tsp
Cumin seeds-1/2 tsp
Red chili powder-1/2 tsp
Coriander powder-1/2 tsp
Turmeric powder-1/4 tsp
Chat masala-1/2 tsp
Dry mango Powder-1/4 tsp
Oil-2tsp
Salt as per taste

Method:

* Dry roast besan in pan on low flame till the color sightly changes.

*In a pan add the oil. once oil become hot add mustard seeds and cumin seeds and let it temper.
*Add Capsicum and saute it.

*Now add all dry spices:red chili powder,coriander powder,chat masala,dry mango powder,salt and turmeric powder.

*On a medium low heat let them cook until it capsicum become soft.



* Add the roasted gram flour and mix it well, cook for about 3-4 mins.so besan will mix with capsicum and other spices.


*Besan wali shimla mirch is ready.

Aloo Paratha

                           "Aloo Paratha"                                  

Ingredients:

For Dough:

2 cup wheat flour
1/2 tsp oil
Pinch of Salt
Water as needed
                   

For Stuffing:

2-3 medium size potato boiled mashed
1 medium size onion finely chopped
3-4 garlic cloves crushed
1/2 tsp coriander seeds
1/4 tsp carom seeds
1/4 tsp fennel seeds
1/2 tsp red chilli powder
1/2 tsp chat masala
1/4 tsp chana masala
2 tsp oil
Salt as per taste

pinch of hing
coriander leaves for garnishing


Method:

For Stuffing:

*In a pan  heat oil and once its hot add carom seeds, fennel seeds , coriander seeds and hing. cook it about 15-20 secs.
*Add crushed garlic and chopped onions and let them cook and onions become translucent. 
*Add all dry spices like salt, red chilli powder,chana masala,chat masala and give a nice stir.
*Add mashed potato and mix well,let it cook for 2-3 mins.
*Stuffing is ready.

For Dough:

                  1.In a bowl add wheat flour, oil and salt. mix well.
                  2. Add water to the flour and knead the paratha dough.
                  3. Rest the dough about 10 mins.

For Parathas :

  * divide dough in equal size of balls.
  * Take a dough ball..shape it like small bowl..add stuffing to it and cover it.
  * Roll the ball and make a circle shape paratha.

To Frying parathas:

*Heat the tawa and grease some oil.(or ghee ).
*Now place the paratha on tawa put some oil. roast from both side one by one until it become golden brown in color.

Bhatura

                                          "Bhatura"


Ingredients:

2 cup Maida( all purpose flour)
1 tsp sugar
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
1 cup curd for kneading dough
oil for deep fry.

Method :

Making Dough:

* Sieve the maida with salt, baking powder and baking soda.
* add sugar and mix well.
*Add  yogurt and mix will and in yogurt bowl add little water.
*Knead the dough by adding the water as required.
*After kneading cover the dough with wet cloth and let it rest for at least 1 hour.

Frying bhatura:

*Heat the oil in frying pan on maximum temp.
*Make small balls out of dough.
* Take one ball flatten it with your palm or you can use rolling pin.
*Fry your Bhatura from both side until it become golden brown and crisp.

Til Ki Papdi

                                 "Til Ki Papdi"



                     Ingredients:


                                                           *Til (sesame seeds):250 gm
                                                           *Sugar                    :250 gm
                                                           *Ghee                     :For greasing

                                                           Method: 

                                       *Roast sesame seeds on medium flame. Keep aside.
.
                                       *Heat sugar in a heavy pan on medium flame,till melted.

                                       *Add sesame in melted sugar,mix well

.
                                       *Grease work surface and rolling pin with ghee,and put sesame mix on                                                    grease surface.

                                       *Flatten with rolling pin,quickly roll as thin as possible.

                                       *Place over a clean plastic sheet to cool.

Instant Milk Cake ( Kalakand)

                          "Kalakand (Milk Cake) In Microwave"

Ingredients:

                        Ricotta Cheese : 15 Oz
           Sweet Condensed Milk : 14 Oz
                    Cardamom seeds  : 4-5
                    Pistachio               : 5-6

Milk Cake In Microwave Method :

* Crush the cardamom seeds and finely chop pistachio or any nut of your choice.

*In microwave safe bowl add sweet condensed milk and ricotta cheese. Wisk it so ricotta cheese     lumps will dissolve.

*Microwave this mix about 10 minuets.Stir with spoon. After every 2 mins stir with spoon.
  Keep checking to avoid burning. Microwave it until it become granular and moisture is lost.

* Add cardamom.
* Greese a plate with few drops of ghee
.
*Spread the hot mix evenly in plate and garnish with chopped nuts.
* While the mix is hot make cut with knife to form square.

* Let it cool before cutting in square pieces.
